Recipe for homemade potato salad

Want to make your own homemade potato salad?


Potato salad is a huge Danish summer classic, which also appears on the menu here at the restaurant from time to time. Should it not be on our menu when the craving for a good, creamy potato salad strikes, you can make one at home with this recipe!

First and foremost, it's important that the potatoes are cooked correctly. Luckily, we've created a guide, which you can find here.


Ingredients

1 kg new Danish potatoes

150 grams mayonnaise

150 grams crème fraiche med (18% fat)

1 tbsp Dijon mustard

1 bunch chives

1 red onion

100 grams of sugar

100 grams of clear vinegar

Salt and ground pepper

Possibly radishes/tomatoes for garnish


Procedure

Start by boiling the potatoes. The potatoes should be cooked until tender, but still firm enough so they don't break apart when mixed for the potato salad. Once the potatoes are cooked, they should not be put in the refrigerator. Potato salad tastes best when the potatoes haven't been refrigerated.

Cut the red onion into fine cubes and boil a pickling brine from the sugar/vinegar. Pickle the onions a minimum of one hour before use.


Tip: Pickled red onions keep for a long time and can be used for many different things, such as salads, burgers, tapas, etc., so when you're pickling onions, definitely make some extra.


Cut the cooked, cooled potatoes into appropriate pieces.


Mix a dressing of mayonnaise, crème fraîche, mustard, pickled red onions, finely sliced chives, salt, and pepper and toss the potatoes in it.


You can garnish the potato salad with, for example, small radishes, tomatoes, and chives.
