Looking for the perfect recipe for homemade frikadeller (danish meatballs)?
It's actually not that complicated. Below you'll find Frank's very own recipe for absolutely legendary homemade frikadeller. Simple and straightforward. Without too much fuss. This recipe is for 1 kg of minced meat but can, of course, be scaled up or down as needed.
Ingredients
1 kg. minced duroc pork
25 g. salt
200 g. onion
2 eggs
2 dl heavy cream
20 g. potato starch
5 g. pepper
Procedure
Grate the onion finely on a grater and mix it with the other ingredients.
Mix the meat mixture for a couple of minutes in a stand mixer and place it in the fridge for about an hour.
Fry the frikadeller in a mixture of oil and butter. Depending on their size, they can be finished cooking in the oven.
(Count on 75 grams of butter and 1/2 dl. neutral oil.)
The frikadeller are great on their own, or served with, for example, potatoes and gravy.
