Looking for the perfect recipe for brunede kartofler (caramelised potatoes)?


It's actually not that complicated. Below you'll find Frank's very own recipe for absolutely legendary caramelised potatoes. Simple and straightforward. Without too much fuss. This recipe is for 1 kg. of potatoes but can, of course, be scaled up or down as needed.


Ingredients

  • 1 kg. potatoes

  • 300 g. sugar

  • 50 g. butter

  • 1 dl. heavy cream


Procedure

  1. Slowly melt the sugar in a pan without letting it burn.

  2. Once the sugar has melted, mix the butter and cream into the mass. Stir everything slowly until it forms a uniform caramel.

  3. Place the potatoes in the caramel in the pan.

  4. Carefully turn them regularly so they are all covered.


Alternatively, the caramel can be placed directly in the fridge and used the following day.
